These cream puffs and éclairs, born from a quest for deliciousness even when frozen, boast a delightful chewy texture.
While conventional crisp dough would become soggy after freezing and thawing, through extensive trial and error, we arrived at a "mochi-like" chewy dough using rice flour.
By using rice flour from Hokuto City's special "Fukkura-ko," the dough doesn't absorb too much moisture after thawing, resulting in a soft and chewy texture.
Since it does not contain wheat, it can be enjoyed by those with wheat allergies (※Wheat products are manufactured in the same factory).
The custard cream inside is generously made with fresh cream from Hokkaido.
It's surprisingly smooth and rich for a frozen product, with a moderate sweetness and a clean aftertaste. It pairs well with the light cream puff pastry, creating a flavor enjoyed by all ages.
The éclairs are also coated with a thicker layer of chocolate to prevent cracking during transport.
